Beef Roast

The star of this dish is the beef roast itself. I recommend using a chuck roast, as it becomes incredibly tender when cooked low and slow, filling your home with a delightful aroma as it braises. The marbling in chuck roast adds richness to the flavor, making each bite a juicy experience.

Seasonings

Don’t skimp on seasonings—these are crucial to elevate your Ninja Foodi roast beef. A blend of garlic powder, onion powder, and smoked paprika provides depth. A generous pinch of salt and pepper ensures the beef is well-seasoned, while fresh herbs like thyme or rosemary can add a lovely, earthy note.

Broth or Stock

Using beef broth or stock not only keeps the meat moist but also enhances the overall flavor. Whether homemade or store-bought, it forms the base for the flavorful gravy that accompanies your roast.

Vegetables

Adding a mix of vegetables like carrots, onions, and potatoes is a great way to enrich the dish. They absorb the savory flavors from the beef and broth, creating a wholesome, one-pot meal.

Olive Oil

A drizzle of olive oil helps to sear the beef, creating a beautifully browned crust that locks in juices. It also adds a touch of richness that complements the flavors beautifully.

Use the Right Cooking Time

Time is crucial when cooking your roast beef in the Ninja Foodi. A general rule of thumb is to cook at high pressure for about 60 minutes for every 2 pounds of meat. Always let your roast rest for at least 10-15 minutes before slicing—this helps retain the juices, ensuring each slice is tender.

Ingredients

Scale
  • 34 lb roast (smaller or larger will just need slight adjustment for time)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 small onion (sliced)
  • 3 tbsp garlic (minced)
  • 1 cup beef broth
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp garlic salt
  • 4 large carrots (cut into large chunks)
  • 4 small potatoes (cut into large chunks, or petite baby potatoes in a bag left whole)
  • 2 tbsp worcestershire sauce

Instructions

  1. Put butter and oil into your foodi and set pot to saute setting.
  2. Season beef with salt, garlic salt and pepper liberally. When butter is melted add roast into pot and sear on each side until well browned, about 1-2 min. on each side. Turn pot off.
  3. Remove meat and deglaze pot by adding a bit of your broth and scraping bits of stuck on meat off bottom of your pot (so you avoid the WATER or burn notice).
  4. Set to saute again, add your onions into pot until they are softer and translucent, then add garlic and cook for 1 more minute. Turn off pot!
  5. Put beef back into your pot with onions, worcestershire sauce, and pour broth on top.
  6. Close pressure cooker lid (one that is not attached) and steam valve, and set to high pressure for 50 minutes.
  7. Then allow steam to naturally release when done. Lift lid when steam is gone and add vegetables.
  8. Close lid again and set on high for 6 minutes. Then do a quick release. Lift lid and remove beef.
  9. Allow to rest for 5 minutes before slicing or shredding to serve.
  10. If you want to make gravy out of drippings in the pot, set to saute again at the end once food is removed. In a bowl whisk 3 tbsp cornstarch with some hot liquid from pot. Whisk until smooth and add back in. Allow to bubble and thicken.
