- 1½ cups all-purpose flour
- ½ cup sugar
- ½ cup brown sugar, packed
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp cinnamon
- 2 eggs
- 1 tsp vanilla extract
- ½ cup vegetable oil
- 1½ cups apples, peeled and diced (Granny Smith recommended)
- 1 cup chopped pecans
- 1 cup brown sugar (for caramel sauce)
- ½ cup heavy cream (for caramel sauce)
- 4 tbsp butter (for caramel sauce)
- 1 tsp vanilla extract (for caramel sauce)
- Pinch of salt (for caramel sauce)
Instructions
- Preheat your oven to 350°F and prepare a mini muffin pan by greasing it or lining with paper cups.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and both sugars.
- In a separate bowl, beat the eggs, vanilla, and oil until well blended.
- Slowly add the wet mixture into the dry, stirring until just combined. Don’t overmix—this keeps the bites tender.
- Gently stir in the diced apples and chopped pecans. The batter will be thick and chunky.
- Scoop the batter into the mini muffin cups, filling each about ¾ full. Bake for 15–18 minutes, or until golden brown and a toothpick comes out clean.
- While the bites bake, combine brown sugar, butter, and cream in a small saucepan over medium heat. Stir constantly until the mixture thickens—about 5–7 minutes. Remove from heat and stir in vanilla and salt.
- Let the bites cool slightly before drizzling warm caramel sauce over each one. Serve immediately or store for later indulgence.
Notes
- These bites are best enjoyed fresh but can be stored for a couple of days in an airtight container.
- For an extra kick, consider adding chopped chocolate or other nuts.
