Delicious apple pecan bites drizzled with warm caramel sauce, perfect for any occasion!


Ingredients

  • 1½ cups all-purpose flour
  • ½ cup sugar
  • ½ cup brown sugar, packed
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup vegetable oil
  • 1½ cups apples, peeled and diced (Granny Smith recommended)
  • 1 cup chopped pecans
  • 1 cup brown sugar (for caramel sauce)
  • ½ cup heavy cream (for caramel sauce)
  • 4 tbsp butter (for caramel sauce)
  • 1 tsp vanilla extract (for caramel sauce)
  • Pinch of salt (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F and prepare a mini muffin pan by greasing it or lining with paper cups.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and both sugars.
  3. In a separate bowl, beat the eggs, vanilla, and oil until well blended.
  4. Slowly add the wet mixture into the dry, stirring until just combined. Don’t overmix—this keeps the bites tender.
  5. Gently stir in the diced apples and chopped pecans. The batter will be thick and chunky.
  6. Scoop the batter into the mini muffin cups, filling each about ¾ full. Bake for 15–18 minutes, or until golden brown and a toothpick comes out clean.
  7. While the bites bake, combine brown sugar, butter, and cream in a small saucepan over medium heat. Stir constantly until the mixture thickens—about 5–7 minutes. Remove from heat and stir in vanilla and salt.
  8. Let the bites cool slightly before drizzling warm caramel sauce over each one. Serve immediately or store for later indulgence.

Notes

  • These bites are best enjoyed fresh but can be stored for a couple of days in an airtight container.
