Ingredients

  • 1 lb flank steak, sliced into thin strips
  • 1 tablespoon light soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1/4 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1/4 cup chicken broth
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (slurry)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1/2 onion, sliced
  • 1 small head of broccoli, cut into florets
  • 1/2 red bell pepper, sliced

Instructions

  1. Marinate the beef: Start by slicing your flank steak thinly against the grain. Mix the beef with light soy sauce, oyster sauce, sugar, cornstarch, and vegetable oil. Let it marinate for at least 15 minutes, or up to an hour.
  2. Prepare the sauce: In a small bowl, stir together the oyster sauce, light soy sauce, sugar, sesame oil, and chicken broth. Set it aside.
  3. Blanch the vegetables: Bring a small pot of water to a boil and quickly blanch the broccoli for about 1–2 minutes. Drain and rinse under cold water.
  4. Heat the wok: Heat a tablespoon of oil in a wok or large skillet over high heat. Add the marinated beef in a single layer. Sear for about 1 minute without stirring, then stir-fry for another 1–2 minutes. Transfer to a plate.
  5. Stir-fry the aromatics: Add another tablespoon of oil to the wok. Toss in the minced garlic and sliced onions. Stir-fry for about 30 seconds.
  6. Add the veggies: Add the blanched broccoli and red bell pepper to the wok. Stir-fry for another minute.
  7. Combine and finish: Return the beef to the wok and pour in the stir-fry sauce. Add the cornstarch slurry and stir until the sauce thickens and coats the beef and veggies evenly.
  8. Serve: Serve your hot and savory beef with oyster sauce over a bed of fluffy white rice or noodles.
