Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the baby potatoes thoroughly. Score each potato halfway through with a sharp knife to create pockets for seasoning.
- In a large bowl, toss the scored potatoes with olive oil, salt, pepper, garlic powder, and fresh herbs until evenly coated.
- Arrange the seasoned potatoes in a single layer on a parchment-lined baking sheet, leaving space between each potato.
- Roast in the preheated oven for 30-35 minutes until golden brown and crispy, flipping halfway through cooking time for even browning.
- Remove from the oven and garnish with additional herbs if desired.
