Description

This Cajun shrimp and rice dish is perfect for a quick and flavorful dinner!

Ingredients

Scale
  • 1 lb Fresh shrimp (large, peeled, and deveined)
  • 2 tbsp Cajun seasoning
  • 2 tbsp Olive oil
  • 1 cup Long-grain rice
  • 2 cups Chicken broth (low-sodium)
  • 1 medium Onion (finely chopped)
  • 1 cup Bell peppers (mixed red and green)
  • 2 cloves Garlic (minced)
  • 2 tbsp Green onions (sliced)

Instructions

  1. Sauté the aromatics in a large skillet over medium heat. Add diced onions, bell peppers, and celery, cooking until they soften and release their delightful fragrance, about 5 minutes.
  2. Season the shrimp with Cajun spices. In a bowl, toss your shrimp with a generous sprinkle of Cajun seasoning until evenly coated.
  3. Cook the shrimp until they’re pink and opaque. Add the seasoned shrimp to the skillet and sauté for 3-4 minutes, stirring occasionally.
  4. Combine with rice and broth. Stir in cooked rice and chicken broth, bringing everything to a gentle simmer. Let it bubble away for about 10 minutes.
  5. Finish with fresh herbs for brightness. Just before serving, stir in chopped parsley or green onions.

Notes

  • Feel free to adjust the spice level by adding more or less Cajun seasoning based on your preference.
  • This dish can be served with a side of crusty bread or salad.
