Description

Delicious and crispy potato pancakes topped with caviar and sour cream.


Ingredients

  • 2 large Russet potatoes
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup caviar (black or red)
  • 1/2 cup sour cream
  • 1/4 cup finely chopped chives
  • to taste Salt
  • to taste pepper
  • 2 tablespoons vegetable oil for frying

Instructions

  1. Peel and grate the potatoes into a bowl. Squeeze out excess moisture using a clean kitchen towel.
  2. In another bowl, whisk together eggs, flour, chives, salt, and pepper. Gently fold in the grated potatoes.
  3. Heat oil in a non-stick skillet over medium heat.
  4. Scoop about two tablespoons of the mixture for each pancake and flatten slightly in the pan.
  5. Cook for about 3 minutes on each side until golden brown.
  6. Transfer to paper towels to absorb excess oil.
  7. Top with sour cream and caviar before serving.

Notes

  • For extra flavor, you can add more chives or herbs.
