Description
Delicious and crispy potato pancakes topped with caviar and sour cream.
Ingredients

- 2 large Russet potatoes
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/2 cup caviar (black or red)
- 1/2 cup sour cream
- 1/4 cup finely chopped chives
- to taste Salt
- to taste pepper
- 2 tablespoons vegetable oil for frying
Instructions
- Peel and grate the potatoes into a bowl. Squeeze out excess moisture using a clean kitchen towel.
- In another bowl, whisk together eggs, flour, chives, salt, and pepper. Gently fold in the grated potatoes.
- Heat oil in a non-stick skillet over medium heat.
- Scoop about two tablespoons of the mixture for each pancake and flatten slightly in the pan.
- Cook for about 3 minutes on each side until golden brown.
- Transfer to paper towels to absorb excess oil.
- Top with sour cream and caviar before serving.
Notes
- For extra flavor, you can add more chives or herbs.
- Make sure the oil is hot enough before adding the pancakes to get them crispy.
