A delicious cheesy ground beef taco skillet, perfect for a quick family dinner.
Ingredients

- 1 pound ground beef
- 1 cup long-grain white rice
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 packet taco seasoning
- 1 can (14 oz) diced tomatoes with green chilies
- 1 medium onion, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Fresh diced tomatoes (for garnish)
Instructions
- Cook the Beef: In a large skillet over medium heat, add olive oil and sauté the chopped onion until translucent. Add the ground beef and cook until browned. Drain excess fat.
- Season the Beef: Stir in the taco seasoning and mix well with the cooked beef.
- Add Rice & Broth: Add the uncooked rice to the mixture and stir to coat with the beef juices. Pour in the beef broth and the canned diced tomatoes with green chilies. Stir to combine.
- Simmer: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the cooked beef and rice mixture. Cover the skillet again and let it sit for a few minutes, until the cheese is melted.
- Garnish & Serve: Garnish with freshly chopped cilantro and diced tomatoes before serving.
Notes
- For extra flavor, consider adding a tablespoon of tomato paste when cooking the beef.
- Substitute ground turkey or chicken for a different protein option.
- Add in extra vegetables such as bell peppers or corn for added texture and nutrition.
