Description

Delicious chocolate banana muffins made with ripe bananas and creamy peanut butter.


Ingredients

Scale
  • 2 large ripe bananas
  • 2 whole eggs
  • 1 cup creamy peanut butter
  • 3/4 cup old fashioned oats
  • 1/2 cup honey
  • 1/2 cup cocoa powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • to taste Chocolate Chips (for sprinkling on top)

Instructions

  1. Preheat oven to 350º F. Spray a 12 cup muffin tin with non-stick spray.
  2. To a high powered blender, add banana, eggs, peanut butter, oats, honey, cocoa powder, vanilla, baking powder, and salt.
  3. Blend until smooth and well mixed. Scrape down the sides as necessary.
  4. Scoop batter into prepared muffin tin, filling about 2/3rd of the way.
  5. Sprinkle the top with chocolate chips.
  6. Bake for 13-15 minutes or until a tester comes out clean.
  7. Remove from the oven and let cool for 5 minutes before removing from the pan to cool.

Notes

  • Make sure bananas are very ripe for the best flavor.
  • Feel free to add nuts for extra texture.
