Ingredients
Scale
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon unsweetened cocoa powder
- 1/4 teaspoon salt
- 3 tablespoons unsalted butter (cubed)
- 1 large egg yolk
- 1/2 cup Marsala wine (or red wine)
- 2 cups ricotta cheese (drained)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 cup mini chocolate chips
- 1 large egg (for sealing the shells)
- Vegetable oil (for frying)
Instructions
- Cannoli Shells:
- Mix Dry Ingredients: Combine the flour, sugar, cocoa powder, and salt in a bowl.
- Add Butter: Mix in the butter cubes until the mixture resembles coarse crumbs.
- Form Dough: Add the egg yolk and Marsala wine to form a dough. Knead until smooth.
- Chill: Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Roll and Cut: Roll out the dough to about 1/8 inch thick. Cut into circles (about 4-5 inches in diameter).
- Shape Shells: Wrap each circle around a metal cannoli tube, sealing edges with beaten egg.
- Fry: Heat vegetable oil in a deep fryer or large pot. Fry shells until golden brown. Remove from oil and let them drain on paper towels. Remove tubes once cooled.
- Filling:
- Mix Ingredients: In a mixing bowl, combine ricotta, powdered sugar, vanilla extract, and cinnamon. Stir until smooth.
- Add Chocolate Chips: Fold in the mini chocolate chips.
- Chill: Chill the filling for at least 30 minutes.
- Assembly:
- Fill Cannoli: Use a pastry bag to pipe the filling into the cooled cannoli shells.
- Decorate: Dip the ends in additional mini chocolate chips if desired.
Notes
- Drain Ricotta: Ensure the ricotta is well-drained to avoid a runny filling.
- Shells Storage: Store shells in an airtight container to keep them crispy.
- Serve Fresh: Fill cannoli just before serving to prevent shells from becoming soggy.
- Variations: Try adding nuts or candied fruit to the filling for additional texture and flavor.
