Description

A delicious blend of almonds, dates, cacao powder, and coconut to create a sweet and healthy treat.


Ingredients

  • 1 cup almonds
  • 1 cup pitted dates
  • 1/4 cup raw cacao powder
  • 1 tbsp coconut oil
  • 1 1/2 cups shredded coconut
  • 1/4 cup coconut cream
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Coconut flakes for garnish

Instructions

  1. Prepare the Base: In a food processor, blend the almonds until finely ground. Add the dates, raw cacao powder, and coconut oil. Blend until the mixture sticks together. Press the mixture firmly into the bottom of a lined muffin tin to form the base of each treat. Place in the freezer to set.
  2. Prepare the Coconut Layer: Blend the shredded coconut in a food processor until it becomes like a thick paste. Add the coconut cream, coconut oil, maple syrup, and vanilla extract to the coconut paste. Blend until smooth and creamy. Spread this mixture evenly over the chocolate base layer in the muffin tins.
  3. Assemble and Freeze: Optionally sprinkle coconut flakes on top for garnish. Place the muffin tin in the freezer for about 2 hours or until the treats are firm.

  • Ensure the dates are soft for easier blending; soak them in warm water for 10 minutes if needed.
