- 200g shrimp, peeled and deveined
- 200g pasta (linguine or fettuccine)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach leaves
- 1/2 cup sun-dried tomatoes, julienned
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish (optional)
Instructions
- Cook the Pasta:
Bring a pot of salted water to a boil. Add the pasta and cook until al dente. Drain and set aside. - Prepare the Shrimp:
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and season with salt, pepper, and Italian seasoning. Cook the shrimp for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside. - Make the Creamy Sauce:
In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce thickens slightly. - Combine Ingredients:
Add the spinach leaves and sun-dried tomatoes to the sauce. Return the cooked shrimp to the skillet. Add the drained pasta and toss everything together to combine. Season with more salt and pepper if needed. - Serve:
Divide the pasta among plates. Garnish with fresh parsley if desired.

- Adjust the sauce consistency by adding more cream or reserved pasta water if needed.
