Description

Ingredients

  • 200g shrimp, peeled and deveined
  • 200g pasta (linguine or fettuccine)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach leaves
  • 1/2 cup sun-dried tomatoes, julienned
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Pasta:
    Bring a pot of salted water to a boil. Add the pasta and cook until al dente. Drain and set aside.
  2. Prepare the Shrimp:
    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and season with salt, pepper, and Italian seasoning. Cook the shrimp for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.
  3. Make the Creamy Sauce:
    In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce thickens slightly.
  4. Combine Ingredients:
    Add the spinach leaves and sun-dried tomatoes to the sauce. Return the cooked shrimp to the skillet. Add the drained pasta and toss everything together to combine. Season with more salt and pepper if needed.
  5. Serve:
    Divide the pasta among plates. Garnish with fresh parsley if desired.
