Description

This creamy sun-dried tomato chicken recipe combines tender chicken breasts with a flavorful sauce featuring sun-dried tomatoes, garlic, and fresh spinach. Perfect served over steamed rice or pasta!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons coconut oil
  • ½ teaspoon sweet paprika
  • ½ teaspoon ground oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 cups heavy cream
  • 1 cup fresh spinach leaves
  • 8 ounces oil-packed sun-dried tomatoes (drained)
  • ¼ cup shredded Parmesan cheese
  • 2 cloves garlic (crushed)

Instructions

  1. Season the chicken breasts with salt, black pepper, sweet paprika, and ground oregano.
  2. In a non-stick pan, add the coconut oil on medium heat.
  3. Add the chicken and cook for 10 minutes on each side until golden brown.
  4. Remove the chicken and set aside.
  5. In the same pan, add the garlic and sun-dried tomatoes. Sauté for 3 minutes on medium heat.
  6. Add heavy cream and spinach, and cook for 10 minutes over medium-low heat, stirring occasionally.
  7. Add parmesan and let the sauce thicken for another 5 minutes.
  8. Add the chicken and let everything combine for 2 minutes.
  9. Serve while warm over some steamed rice or pasta! Enjoy!
