Description

A delicious and creamy dish featuring ground sausage, cheese tortellini, and fresh spinach, perfect for a comforting dinner.


Ingredients

  • 1 pound Ground Sausage
  • 1 Onion, diced
  • 3 cloves Garlic, minced (or 1 tablespoon pre-minced garlic)
  • 3 tablespoons Butter
  • 1/4 cup All Purpose Flour
  • 3 cups Chicken Broth
  • 8 ounces Tomato Sauce
  • 2 teaspoons Italian Seasoning
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Red Pepper Flakes
  • 8 ounces Refrigerated Cheese Tortellini
  • 1/2 cup Grated Parmesan Cheese
  • 1 cup Fresh Spinach, roughly chopped
  • 1/2 cup Heavy Cream

Instructions

  1. Brown the ground sausage with the diced onion over medium high in a large stock pot or dutch oven. Break up the sausage as it browns and cook until the sausage is no longer pink (5-7 minutes).
  2. Drain off any excess grease.
  3. Add in the minced garlic and cook until you can smell the garlic (approximately 1 minute).
  4. Add in the butter and cook until it melts.
  5. Stir in the flour and sauté for 1 more minute.
  6. Add in the chicken broth, tomato sauce, Italian seasoning, salt, pepper and red pepper flakes.
  7. Bring the mixture to a boil. Stir in the tortellini and cook for 3-4 minutes until tender.
  8. Stir in the chopped spinach, parmesan cheese and heavy cream. Heat for a few minutes until the spinach is wilted.
  9. Taste test and adjust the seasoning based on your preference.
  10. Serve immediately while warm and enjoy!

Notes

  • For a slightly thicker sauce, you can add more flour.
  • Feel free to substitute ground turkey or chicken for the sausage for a lighter option.
