A delicious and creamy dish featuring ground sausage, cheese tortellini, and fresh spinach, perfect for a comforting dinner.

- 1 pound Ground Sausage
- 1 Onion, diced
- 3 cloves Garlic, minced (or 1 tablespoon pre-minced garlic)
- 3 tablespoons Butter
- 1/4 cup All Purpose Flour
- 3 cups Chicken Broth
- 8 ounces Tomato Sauce
- 2 teaspoons Italian Seasoning
- 1/4 teaspoon Salt
- 1/4 teaspoon Pepper
- 1/4 teaspoon Red Pepper Flakes
- 8 ounces Refrigerated Cheese Tortellini
- 1/2 cup Grated Parmesan Cheese
- 1 cup Fresh Spinach, roughly chopped
- 1/2 cup Heavy Cream
Instructions
- Brown the ground sausage with the diced onion over medium high in a large stock pot or dutch oven. Break up the sausage as it browns and cook until the sausage is no longer pink (5-7 minutes).
- Drain off any excess grease.
- Add in the minced garlic and cook until you can smell the garlic (approximately 1 minute).
- Add in the butter and cook until it melts.
- Stir in the flour and sauté for 1 more minute.
- Add in the chicken broth, tomato sauce, Italian seasoning, salt, pepper and red pepper flakes.
- Bring the mixture to a boil. Stir in the tortellini and cook for 3-4 minutes until tender.
- Stir in the chopped spinach, parmesan cheese and heavy cream. Heat for a few minutes until the spinach is wilted.
- Taste test and adjust the seasoning based on your preference.
- Serve immediately while warm and enjoy!
Notes
- For a slightly thicker sauce, you can add more flour.
- Feel free to substitute ground turkey or chicken for the sausage for a lighter option.
