This creamy chicken orzo dish is comforting and packed with flavor, perfect for a weeknight meal.

- 1 pound chicken breasts, cubed
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 1 1/2 cups dry orzo pasta
- 3 cups chicken broth
- 1 cup heavy cream
- 3/4 cup grated parmesan cheese
- 1 heaping cup fresh spinach
- 1/2 cup sliced sun-dried tomatoes in oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Season chicken with salt, pepper, paprika, and half the Italian seasoning.
- Heat olive oil and sear chicken until golden. Remove and set aside.
- Add butter and onions; cook until softened.
- Add garlic and cook 30 seconds.
- Stir in orzo and toast 1 minute.
- Add broth and simmer 8–10 minutes, stirring regularly.
- Add cream, parmesan, sun-dried tomatoes, red pepper flakes, and remaining seasoning. Return chicken.
- Simmer until creamy and tender.
- Stir in spinach until wilted.
- Taste, adjust seasoning, and garnish with parsley.
Notes
- This dish pairs well with a side salad or crusty bread.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
