Description

This creamy chicken orzo dish is comforting and packed with flavor, perfect for a weeknight meal.


Ingredients

  • 1 pound chicken breasts, cubed
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 1 1/2 cups dry orzo pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 1 heaping cup fresh spinach
  • 1/2 cup sliced sun-dried tomatoes in oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season chicken with salt, pepper, paprika, and half the Italian seasoning.
  2. Heat olive oil and sear chicken until golden. Remove and set aside.
  3. Add butter and onions; cook until softened.
  4. Add garlic and cook 30 seconds.
  5. Stir in orzo and toast 1 minute.
  6. Add broth and simmer 8–10 minutes, stirring regularly.
  7. Add cream, parmesan, sun-dried tomatoes, red pepper flakes, and remaining seasoning. Return chicken.
  8. Simmer until creamy and tender.
  9. Stir in spinach until wilted.
  10. Taste, adjust seasoning, and garnish with parsley.
