Ingredients

  • 2 tbsp white miso paste
  • 3 tbsp extra virgin olive oil
  • 1 tbsp maple syrup
  • 2 tbsp toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the delicata squash into rings about half an inch thick, removing seeds but keeping the skin.
  3. In a bowl, whisk together miso paste, olive oil, and maple syrup until smooth.
  4. Toss the squash rings in the miso mixture until fully coated.
  5. Arrange coated rings on a parchment-lined baking sheet in a single layer.
  6. Roast for 25 minutes or until golden brown and tender.
  7. Sprinkle with toasted sesame seeds before serving.
