- 1 medium delicata squash (about 1 lb)
- 2 tbsp white miso paste
- 3 tbsp extra virgin olive oil
- 1 tbsp maple syrup
- 2 tbsp toasted sesame seeds
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the delicata squash into rings about half an inch thick, removing seeds but keeping the skin.
- In a bowl, whisk together miso paste, olive oil, and maple syrup until smooth.
- Toss the squash rings in the miso mixture until fully coated.
- Arrange coated rings on a parchment-lined baking sheet in a single layer.
- Roast for 25 minutes or until golden brown and tender.
- Sprinkle with toasted sesame seeds before serving.
