Description

A delightful lemon cake that is perfect for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup lemon curd
  • Powdered sugar, for dusting

Instructions

  1. Preheat the Oven:
    – Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the Cake Batter:
    – In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each addition.
    – In another bowl, mix the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk. Mix until just combined.
    – Stir in the lemon juice and lemon zest.
  3. Bake the Cake:
    – Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    – Allow cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  4. Prepare the Filling:
    – In a medium bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
    – Gently fold in the lemon curd, creating a marbled effect.
  5. Assemble the Cake:
    – Place one cake layer on a serving plate. Spread the lemon cream mixture over the top.
    – Place the second cake layer on top, pressing gently. Dust the cake generously with powdered sugar.
  6. Chill and Serve:
    – Chill the assembled cake in the refrigerator for at least 1 hour before serving to set the filling.

Notes

  • For extra lemon flavor, add a tablespoon of lemon extract to the batter.
  • Ensure that all ingredients are at room temperature for the best consistency.
  • If you prefer a more tart filling, increase the amount of lemon curd.
  • This cake keeps well in the fridge for 3 days, covered in plastic wrap.
