Ingredients

- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup plain Greek yogurt
- 1/2 cup whole milk (or dairy-free alternative)
- 1 large egg
- 1 cup fresh blueberries
- Maple syrup for drizzling
Instructions
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, whisk together Greek yogurt, milk, and egg until smooth.
- Combine wet and dry ingredients gently; fold in blueberries.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on top, then flip and cook until golden brown, about 3-4 minutes per side.
- Serve warm with maple syrup and additional blueberries if desired.
Notes
- For a dairy-free version, substitute Greek yogurt and milk with non-dairy alternatives.
- Make sure not to overmix the batter to keep pancakes fluffy.
