Instructions
- Prepare the Cookie Dough: In a bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Mix in the vanilla extract and milk. Gradually add the flour until well combined. Fold in the sprinkles. Set aside about 1/4 of the dough for garnish and press the rest into the bottom of a greased 9-inch springform pan to form a crust.
- Make the Cheesecake Filling: Preheat your oven to 325°F (163°C). In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until combined. Fold in the sprinkles gently. Pour the cheesecake mixture over the cookie dough crust in the springform pan.
- Bake the Cheesecake: Place in the preheated oven and bake for about 50-60 minutes, or until the center is almost set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour. Once cooled, refrigerate for at least 4 hours or overnight.
- Garnish and Serve: Before serving, roll the reserved cookie dough into small balls. Top the cheesecake with whipped cream, cookie dough balls, and additional sprinkles. Release the cheesecake from the springform pan carefully and transfer to a serving plate.
