Ingredients

- 2 ¼ cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- ¼ tsp nutmeg
- 2 tsp baking soda
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- ¾ cup brown sugar
- ¼ cup molasses
- 1 large egg
- 1 tsp vanilla extract
- ½ cup granulated sugar (for rolling)
- ¾ cup powdered sugar (for rolling)
Instructions
- In a bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
- In another bowl, cream butter and brown sugar until light and fluffy. Beat in molasses, egg, and vanilla.
- Gradually mix in dry ingredients until a soft dough forms.
- Chill dough for 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll dough into 1-inch balls, then roll first in granulated sugar and then in powdered sugar.
- Place cookies 2 inches apart and bake for 10–12 minutes until crackled and set.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- For a spicier cookie, increase the amount of ginger and cinnamon.
- Store cookies in an airtight container to maintain freshness.
