Ingredients

- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 medium bell pepper, sliced
- 1 medium zucchini, sliced into half-moons
- 1 cup broccoli florets
- 1 medium carrot, julienned or sliced thin
- ½ cup snap peas
- ½ cup mushrooms, sliced
- Salt and black pepper, to taste
- 1 tsp lemon juice (optional)
- 1 tsp balsamic vinegar or soy sauce (optional)
- Optional toppings: toasted nuts, seeds, fresh herbs, grated Parmesan
Instructions
- Prepare all your vegetables by slicing and julienning them.
- In a large skillet over medium-high heat, add the olive oil.
- Add the sliced onion and sauté for about 2-3 minutes until translucent.
- Add in the minced garlic and stir for 30 seconds until fragrant.
- Add the bell pepper, carrot, and zucchini, sautéing for 3-4 minutes.
- Add in the broccoli, mushrooms, and snap peas, cooking for another 3-4 minutes until tender but crisp.
- Season with salt and black pepper, and add balsamic vinegar or soy sauce if desired.
- Finish with lemon juice, give a final toss, and serve.
Notes
- This dish is highly customizable; feel free to use your favorite vegetables.
