- 3 to 4 pounds beef chuck roast
- 4 large potatoes, peeled and cut into chunks
- 4 carrots, peeled and cut into pieces
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- chopped fresh parsley, for garnish
Instructions
- Prepare the Vegetables: Peel and chop the potatoes and carrots into chunks. Set aside.
- Sear the Beef: Season the beef roast with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned. This locks in the flavor.
- Flavor Base: In the same skillet, add more olive oil if needed and sauté the chopped onion and minced garlic until translucent. Stir in the tomato paste and cook for another 2 minutes.
- Assemble the Pot Roast: Place the seared beef roast in the slow cooker. Add the sautéed onion, garlic, and tomato paste mixture over the beef. Arrange the potatoes and carrots around the beef.
- Add Liquids and Seasonings: Pour the beef broth and red wine (if using) over the ingredients in the slow cooker. Add Worcestershire sauce, bay leaves, thyme, and rosemary.
- Slow Cooking: Cover and cook on low for 8 to 10 hours or until the beef is tender and falls apart easily.
- Finishing Touches: Remove bay leaves before serving. Taste and adjust seasoning with salt and pepper as needed. Garnish with freshly chopped parsley.
Notes
- For a thicker gravy, remove some of the cooking liquid and whisk in flour or cornstarch, then return it to the slow cooker.
- For added flavor, marinate the beef overnight in the refrigerator with a mixture of the broth, wine, and seasonings.
- Use a digital meat thermometer to ensure the beef reaches an internal temperature of at least 145°F for medium-rare and 160°F for medium.
