Ingredients

  • 3 to 4 pounds beef chuck roast
  • 4 large potatoes, peeled and cut into chunks
  • 4 carrots, peeled and cut into pieces
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • chopped fresh parsley, for garnish

Instructions

  1. Prepare the Vegetables: Peel and chop the potatoes and carrots into chunks. Set aside.
  2. Sear the Beef: Season the beef roast with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned. This locks in the flavor.
  3. Flavor Base: In the same skillet, add more olive oil if needed and sauté the chopped onion and minced garlic until translucent. Stir in the tomato paste and cook for another 2 minutes.
  4. Assemble the Pot Roast: Place the seared beef roast in the slow cooker. Add the sautéed onion, garlic, and tomato paste mixture over the beef. Arrange the potatoes and carrots around the beef.
  5. Add Liquids and Seasonings: Pour the beef broth and red wine (if using) over the ingredients in the slow cooker. Add Worcestershire sauce, bay leaves, thyme, and rosemary.
  6. Slow Cooking: Cover and cook on low for 8 to 10 hours or until the beef is tender and falls apart easily.
  7. Finishing Touches: Remove bay leaves before serving. Taste and adjust seasoning with salt and pepper as needed. Garnish with freshly chopped parsley.

Notes

  • For a thicker gravy, remove some of the cooking liquid and whisk in flour or cornstarch, then return it to the slow cooker.
  • For added flavor, marinate the beef overnight in the refrigerator with a mixture of the broth, wine, and seasonings.
  • Use a digital meat thermometer to ensure the beef reaches an internal temperature of at least 145°F for medium-rare and 160°F for medium.
