Description

This herb-crusted savory meatloaf is a delightful blend of beef and pork, enhanced with fresh herbs and spices.

Ingredients

Scale
  • 1 1/2 pounds ground beef or a mix of beef and pork
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 large egg
  • 2 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large bowl, combine ground meat, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, Dijon mustard, salt, and pepper. Mix until well combined.
  3. Shape the Loaf: Transfer the mixture onto a baking sheet lined with parchment paper. Shape it into a loaf, smoothing out the surface.
  4. Prepare Herb Crust: In a small bowl, mix the fresh parsley, rosemary, thyme, and olive oil. Pat this mixture over the top and sides of the meatloaf.
  5. Glaze the Loaf: In a separate bowl, combine ketchup and Worcestershire sauce. Spread this glaze over the top of the herb layer.
  6. Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  7. Rest and Serve: Remove from the oven and let the meatloaf rest for 10 minutes before slicing. This helps in retaining its juices.

Notes

  • For added moisture, substitute a portion of the ground meat with ground turkey or pork.
  • Incorporate sautéed onions or mushrooms into the meat mixture for extra flavor.
  • Use a meat thermometer to ensure perfect doneness.
  • Serve with roasted vegetables or mashed potatoes for a complete meal.
