Description

This indulgent chocolate topped cheesecake features a creamy filling, deliciously rich chocolate, and a crumbly biscuit base.


Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 600g cream cheese, room temperature
  • 200g caster sugar
  • 200ml heavy cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 150g milk chocolate, chopped
  • 100g dark chocolate, shaved (for decoration)
  • Whipped cream (for decoration)

Instructions

  1. Prepare the Base: Place the digestive biscuits in a food processor and blitz until fine crumbs form. In a bowl, combine the biscuit crumbs with melted butter until the mixture resembles wet sand. Press the mixture into the bottom of a 9-inch springform pan, ensuring it’s evenly spread. Chill in the refrigerator for 30 minutes.
  2. Make the Filling: Preheat your oven to 325°F (160°C). In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and heavy cream. Gently fold in the chopped milk chocolate. Pour the cream cheese filling over the chilled biscuit base, smoothing the top with a spatula.
  3. Bake the Cheesecake: Place the cheesecake in the oven and bake for 50-60 minutes or until the center is set. Slight wobble in the middle is fine. Turn off the oven and leave the cheesecake inside with the door ajar to cool gradually. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  4. Decorate: Pipe whipped cream around the edges of the cheesecake. Sprinkle shaved dark chocolate over the top. Slice and serve chilled for best texture.
