- 1 cup boiling water (use hot to properly dissolve the Jell-O)
- 1 cup cold water (helps cool the mixture quickly)
- 1 cup low-fat cottage cheese (or Greek yogurt for a smoother texture)
- 1/2 cup fat-free Cool Whip (or light whipped topping)
- 1/2 tsp vanilla or almond extract (optional)
- a pinch pink salt (optional, enhances sweetness)
Instructions
- Begin by boiling 1 cup of water in a saucepan until bubbling.
- Pour the box of sugar-free Jell-O into the boiling water. Stir briskly until the mixture is completely dissolved and smooth.
- Stir in 1 cup of cold water to the Jell-O mix.
- In a separate bowl, combine low-fat cottage cheese with the Jell-O mixture. Blend harmoniously until well mixed.
- Gently fold in ½ cup of fat-free Cool Whip into the cottage cheese mixture.
- Optionally, add ½ teaspoon of vanilla or almond extract along with a pinch of pink salt.
- Transfer the mixture into a bowl and refrigerate for 2-3 hours.
