Description

A delicious cherry cream tart with a buttery shortbread crust.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 2 cups fresh cherries, pitted and halved
  • 2 tsp pure vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a tart pan.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy. Gradually add flour until fully combined. Press the mixture into the tart pan evenly.
  3. Bake the crust for 15-20 minutes or until golden brown. Let it cool.
  4. While cooling, mix cherries with vanilla extract in a bowl and let marinate for 10 minutes.
  5. In another bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar, continuing to whip until stiff peaks are reached.
  6. Spread whipped cream over the cooled shortbread crust, top with marinated cherries, and serve chilled or at room temperature.

Notes

  • Cherries can be replaced with other fruits if desired.
  • For a sweeter tart, adjust the amount of sugar in the whipped cream.
