- 4 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 cup whipped cream (for filling)
- 2 tbsp powdered sugar (for filling)
Instructions
- Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper and lightly grease.
- In a mixing bowl, whisk eggs and granulated sugar until creamy.
- In another bowl, combine flour, baking powder, and salt. Gradually add dry ingredients to the egg mixture until smooth.
- Gently fold in vanilla extract.
- Spread batter evenly in the prepared pan and bake for 12-15 minutes until golden brown; test doneness with a toothpick.
- Remove from oven and turn onto a powdered sugar-dusted kitchen towel; roll up tightly using the towel.
- Once cooled, unroll gently and spread whipped cream mixed with powdered sugar over the surface. Re-roll without the towel, slice into pieces, serve, and enjoy!
