Ingredients

- 2 medium sweet potatoes (about 500g), sliced into half-inch rounds
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp freshly cracked black pepper
- 100g feta cheese
- 2 tbsp Greek yogurt
- 1 tbsp fresh lemon juice
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, toss the sweet potato rounds in olive oil, salt, and pepper. Spread them on a parchment-lined baking sheet.
- Roast for 25-30 minutes until golden brown.
- While the sweet potatoes roast, blend feta cheese, Greek yogurt, lemon juice, and a drizzle of olive oil in a food processor until smooth.
- Once roasted, top each sweet potato round with whipped feta and serve warm.
