Description

Delicious roasted sweet potatoes topped with smooth whipped feta and served warm.


Ingredients

Scale
  • 2 medium sweet potatoes (about 500g), sliced into half-inch rounds
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp freshly cracked black pepper
  • 100g feta cheese
  • 2 tbsp Greek yogurt
  • 1 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss the sweet potato rounds in olive oil, salt, and pepper. Spread them on a parchment-lined baking sheet.
  3. Roast for 25-30 minutes until golden brown.
  4. While the sweet potatoes roast, blend feta cheese, Greek yogurt, lemon juice, and a drizzle of olive oil in a food processor until smooth.
  5. Once roasted, top each sweet potato round with whipped feta and serve warm.
