Description

Ingredients

  • 4 cups tortilla chips or 6 large tortillas
  • 2 cups shredded cheddar cheese
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1/2 cup diced green bell peppers
  • 1/4 cup chopped cilantro
  • 1 onion, diced (optional)
  • 1 can black beans, drained (optional)
  • sliced jalapeños (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Beef: In a large skillet, sauté the diced onion over medium heat until translucent. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  3. Add Seasoning: Stir in the taco seasoning packet and add water according to the package instructions. Let it simmer until the sauce thickens.
  4. Layer the Casserole: In a 9×13 inch baking dish, start with a layer of tortilla chips or tortillas. Spread a portion of the cooked beef mixture on top. Sprinkle some black beans (if using) and a layer of cheddar cheese. Repeat layers until all ingredients are used, ending with a generous layer of cheese on top.
  5. Bake: Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  6. Prepare Toppings: While the casserole is baking, prepare the toppings. Mix the diced tomatoes, green bell peppers, and chopped cilantro in a bowl.
  7. Assemble and Serve: Once the casserole is ready, remove it from the oven and let it cool for a few minutes. Top with the tomato and bell pepper mixture. Add dollops of sour cream and garnish with jalapeños if desired.
