Description
Deliciously minty brownies topped with cream cheese frosting and a rich chocolate ganache.
Ingredients

- 1 cup + 2 tbsp Chocolate Chips
- 2/3 cup Heavy Cream
- 5 tbsp Butter
- 3 oz Cream Cheese, Softened
- 1 tsp Peppermint Extract
- 2 cups Powdered Sugar
- 1 box Brownie Mix + Ingredients on the Box
- 6 Oreo’s, Finely Chopped
- Green Food Coloring
Instructions
- Preheat oven to 350 degrees. Line a 9 x 9 pan with parchment paper and set aside.
- Make the brownie mix according to the directions on the box. Finely chop Oreo’s and add to the brownie batter.
- Pour batter into the prepared pan and bake according to suggested time on the box.
- When done, remove from the oven and allow to cool for 5 minutes. Then place in the freezer while preparing the frosting.
- To make the frosting, beat together softened cream cheese and softened butter until creamy. Add in peppermint extract and green food coloring. Mix in. Then add powdered sugar and beat until smooth and creamy.
- Spread frosting over cooled brownies and return to freezer while preparing the ganache.
- To make the ganache, pour chocolate chips into a bowl. In a separate bowl, melt heavy cream and butter for 60 seconds in the microwave. Remove from the microwave and stir to combine. Pour over chocolate chips, cover the bowl, and let sit for 5 minutes.
- When the 5 minutes is up, whisk until ganache is formed. Let it sit for 10-15 minutes to thicken. Then remove brownies from the freezer and pour over the frosting layer.
- Let brownies sit at room temperature for 30 minutes. Then refrigerate for 2-3 hours before cutting and serving.
Notes
- Make sure the brownies are fully cooled before frosting to avoid melting.
