Description

A delicious roast recipe featuring smoked sausage, baby potatoes, and fresh green beans.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1 lb baby potatoes, halved or quartered
  • 1 lb fresh green beans, trimmed
  • 1 large yellow onion, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried Italian herbs
  • 0 tsp salt
  • 0 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the baby potatoes into halves or quarters.
  3. Trim the green beans and slice the onion.
  4. Slice the smoked sausage into thick rounds.
  5. In a large bowl, toss everything with olive oil, garlic powder, onion powder, Italian herbs, salt, and pepper.
  6. Spread all ingredients in a single layer on a large sheet pan.
  7. Roast for 35–40 minutes, flipping once halfway through.
  8. Check that the potatoes are tender and sausage is browned.
  9. Optionally garnish with chopped parsley or lemon juice before serving.
  10. Serve warm and enjoy!
