A delicious roast recipe featuring smoked sausage, baby potatoes, and fresh green beans.

- 1 lb smoked sausage, sliced
- 1 lb baby potatoes, halved or quartered
- 1 lb fresh green beans, trimmed
- 1 large yellow onion, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried Italian herbs
- 0 tsp salt
- 0 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the baby potatoes into halves or quarters.
- Trim the green beans and slice the onion.
- Slice the smoked sausage into thick rounds.
- In a large bowl, toss everything with olive oil, garlic powder, onion powder, Italian herbs, salt, and pepper.
- Spread all ingredients in a single layer on a large sheet pan.
- Roast for 35–40 minutes, flipping once halfway through.
- Check that the potatoes are tender and sausage is browned.
- Optionally garnish with chopped parsley or lemon juice before serving.
- Serve warm and enjoy!
