Description

A deliciously vibrant and creamy layered cake made with ube and topped with whipped cream.


Ingredients

  • 2 1/2 cups cake flour
  • 1 1/2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup pureed ube (purple yam)
  • 3/4 cup coconut milk
  • 1/4 cup whole milk
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 4 large egg whites, at room temperature
  • Purple food coloring (optional for enhanced color)
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Desiccated coconut or purple sprinkles for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.

  2. In a large bowl, sift together the cake flour, sugar, baking powder, and salt. Set aside.

  3. In another bowl, mix the pureed ube, coconut milk, whole milk, canola oil, and vanilla extract. Stir until well combined. Add purple food coloring if desired.

  4. Add the wet ingredients to the dry ingredients, mixing until just combined.

  5. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cake batter.

  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

  8. In a chilled bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.

  9. Place one cake layer on a serving plate. Spread a layer of whipped cream on top. Place the second cake layer on top and spread more whipped cream over the top and sides of the cake.

  10. Sprinkle desiccated coconut or purple sprinkles on top for added texture and decoration.

Notes

  • Using too much ube can make the cake dense; ensure the ube is well-pureed for a smoother batter.
  • Adjust the amount of sugar in the whipped cream according to your taste preference.
  • For a nuttier flavor, you can substitute part of the canola oil with melted butter.
  • Ensure your egg whites are at room temperature to achieve maximum volume when whipping.
