Description
A deliciously vibrant and creamy layered cake made with ube and topped with whipped cream.
Ingredients
- 2 1/2 cups cake flour
- 1 1/2 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup pureed ube (purple yam)
- 3/4 cup coconut milk
- 1/4 cup whole milk
- 1/4 cup canola oil
- 1 teaspoon vanilla extract
- 4 large egg whites, at room temperature
- Purple food coloring (optional for enhanced color)
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Desiccated coconut or purple sprinkles for garnish
Instructions
-
Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
-
In a large bowl, sift together the cake flour, sugar, baking powder, and salt. Set aside.
-
In another bowl, mix the pureed ube, coconut milk, whole milk, canola oil, and vanilla extract. Stir until well combined. Add purple food coloring if desired.
-
Add the wet ingredients to the dry ingredients, mixing until just combined.
-
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cake batter.
-
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
-
Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
-
In a chilled bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
-
Place one cake layer on a serving plate. Spread a layer of whipped cream on top. Place the second cake layer on top and spread more whipped cream over the top and sides of the cake.
-
Sprinkle desiccated coconut or purple sprinkles on top for added texture and decoration.
Notes
- Using too much ube can make the cake dense; ensure the ube is well-pureed for a smoother batter.
- Adjust the amount of sugar in the whipped cream according to your taste preference.
- For a nuttier flavor, you can substitute part of the canola oil with melted butter.
- Ensure your egg whites are at room temperature to achieve maximum volume when whipping.
