- 3 large eggs
- 1/2 cup oil
- 1 cup water
- 1 cup cream cheese frosting
- 2 cups white chocolate chips
- 2 tablespoons coconut oil or shortening
- Red food coloring (gel preferred)
- 12 popsicle sticks
Instructions
- Prepare the red velvet cake according to the package instructions or your homemade recipe.
- Allow the cake to cool completely.
- Crumble the cooled red velvet cake into a large bowl.
- Add cream cheese frosting and mix until it forms a dough-like consistency.
- Take a small portion of the cake mixture and mold it into a popsicle shape.
- Insert a popsicle stick into each shaped piece.
- Place them on a lined baking sheet and freeze for at least 1 hour, or until firm.
- In a microwave-safe bowl, melt white chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth.
- Add a few drops of red food coloring to a portion of the white chocolate for drizzling.
- Dip each frozen cake popsicle into the white chocolate, ensuring it is fully coated.
- Place them back on the lined baking sheet.
- Use a spoon or piping bag to drizzle the colored red chocolate over the coated popsicles for decoration.
- Return to the freezer for 30 minutes to set.
