Description

A delicious recipe for red velvet cake popsicles, perfect for a summer treat!

Ingredients

Scale
  • 1 box red velvet cake mix (or homemade red velvet cake)
  • 3 large eggs
  • 1/2 cup oil
  • 1 cup water
  • 1 cup cream cheese frosting
  • 2 cups white chocolate chips
  • 2 tablespoons coconut oil or shortening
  • Red food coloring (gel preferred)
  • 12 popsicle sticks

Instructions

  1. Prepare the red velvet cake according to the package instructions or your homemade recipe.
  2. Allow the cake to cool completely.
  3. Crumble the cooled red velvet cake into a large bowl.
  4. Add cream cheese frosting and mix until it forms a dough-like consistency.
  5. Take a small portion of the cake mixture and mold it into a popsicle shape.
  6. Insert a popsicle stick into each shaped piece.
  7. Place them on a lined baking sheet and freeze for at least 1 hour, or until firm.
  8. In a microwave-safe bowl, melt white chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth.
  9. Add a few drops of red food coloring to a portion of the white chocolate for drizzling.
  10. Dip each frozen cake popsicle into the white chocolate, ensuring it is fully coated.
  11. Place them back on the lined baking sheet.
  12. Use a spoon or piping bag to drizzle the colored red chocolate over the coated popsicles for decoration.
  13. Return to the freezer for 30 minutes to set.

Notes

  • Ensure the cake popsicles are completely frozen before dipping to avoid crumbling.
  • For smoother chocolate coating, ensure the white chocolate is fully melted and free of lumps.
  • Use gel food coloring to avoid altering the chocolate’s texture.
  • Store in an airtight container in the freezer to keep them fresh.
