Instructions
- Prepare the Tenderloin: Preheat your oven to 400°F (200°C). Pat the beef tenderloin dry with paper towels. Season the beef generously with salt and black pepper.
- Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. Transfer the beef to a roasting pan.
- Make the Glaze: In a small saucepan, combine the cranberries, balsamic vinegar, honey, garlic, and rosemary. Bring to a simmer over medium heat and cook until the cranberries burst and the mixture thickens, about 10 minutes. Remove the glaze from heat and let it cool slightly.
- Roast the Beef: Brush the cranberry glaze over the tenderloin, reserving some for serving. Roast in the preheated oven for about 25-30 minutes for medium-rare, or adjust according to your preference. Use a meat thermometer to ensure desired doneness (135°F for medium-rare).
- Rest the Beef: Remove the beef from the oven and cover it with aluminum foil. Let it rest for 10-15 minutes before slicing to lock in juices.
- Serve: Slice the beef tenderloin and serve with the remaining cranberry glaze on the side.
