Instructions

  1. Prepare the Tenderloin: Preheat your oven to 400°F (200°C). Pat the beef tenderloin dry with paper towels. Season the beef generously with salt and black pepper.
  2. Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. Transfer the beef to a roasting pan.
  3. Make the Glaze: In a small saucepan, combine the cranberries, balsamic vinegar, honey, garlic, and rosemary. Bring to a simmer over medium heat and cook until the cranberries burst and the mixture thickens, about 10 minutes. Remove the glaze from heat and let it cool slightly.
