Instructions

  1. Prepare the Sausage: In a skillet over medium heat, cook the ground sausage until browned and fully cooked. Drain excess fat and set aside.
  2. Make the Pancake Batter: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, mix buttermilk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and stir until combined. Some lumps are okay.
  3. Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour a small amount of batter onto the skillet (1/4 cup for each pancake). Sprinkle cooked sausage and shredded cheese on top before the batter sets. When bubbles form on the pancake surface, flip and cook until golden brown. Repeat the process until all batter is used.
  4. Assemble the Stack: Stack the pancakes on a plate, layering additional cheese between if desired. Keep warm in a low oven if making in advance.
