Description

Delicious savory spinach pie slices filled with fresh spinach and feta, wrapped in flaky puff pastry.

Ingredients

Scale
  • 1 package puff pastry (thawed)
  • 1 pound fresh spinach (washed and chopped)
  • 1 cup feta cheese (crumbled)
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 egg (beaten, for egg wash)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Filling: Heat olive oil in a large pan over medium heat. Sauté the onion and garlic until they are soft and translucent. Add the chopped spinach to the pan and cook until wilted. Season with salt and pepper. Remove from heat and let it cool slightly. Mix in the crumbled feta cheese until well combined.
  3. Prepare the Dough: Roll out the puff pastry on a floured surface to about 1/4 inch thickness. Cut the pastry into large squares or triangles, depending on your preference.
  4. Assemble the Pie: Place a spoonful of the spinach mixture onto each pastry piece. Fold the pastry over the filling to create a sealed pocket and press the edges with a fork to seal. Arrange the pies on a baking sheet lined with parchment paper.
  5. Add Finishing Touches: Brush the tops of the pastries with the beaten egg for a golden finish. Bake in the preheated oven for about 20-25 minutes or until the pastry is golden brown.
  6. Garnish and Serve: Remove from the oven and let cool slightly. Garnish with freshly chopped parsley before serving.

Notes

  • Ensure the spinach is thoroughly drained to avoid soggy pastry.
  • Mix in some nutmeg or lemon zest to the filling for an extra layer of flavor.
  • You can substitute spinach with kale or swiss chard if desired.
  • Serve warm with a side of tzatziki or a light salad for a complete meal.
