Ingredients

  • 1 pound potato gnocchi
  • 6 ounces smoked salmon, sliced into strips
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon salt (or to taste)
  • 1 cup fresh spinach (optional)
  • 2 tablespoons chopped fresh parsley or dill

Instructions

  1. Cook the gnocchi: Bring a large pot of salted water to a gentle boil. Add the gnocchi and cook according to package instructions. They are ready when they float to the surface, usually within 2–3 minutes. Drain and set aside. I always save a tablespoon or two of pasta water, just in case the sauce needs loosening later.
  2. Sauté the garlic: In a large skillet over medium heat, warm the olive oil. Add the minced garlic and cook for about 30 seconds until fragrant. Be careful not to brown it. The smell at this stage already hints at the cozy meal to come.
  3. Create the creamy sauce: Pour in the heavy cream and it simply warms through and softens slightly.
  4. Combine with gnocchi: Add the drained gnocchi to the skillet. Toss gently to coat every piece in the creamy sauce. If the sauce feels too thick, add a splash of reserved pasta water.
  5. Finish and serve: Sprinkle with fresh parsley or dill. Serve immediately while warm and creamy.
