Deliciously crispy chicken bites coated in a spicy Korean glaze.

- 1 lb (450g) chicken breast, cut into bite-sized pieces
- 1 cup all-purpose flour
- 1 cup cornstarch
- Oil for frying
- 2/3 cup Korean gochujang (red chili paste)
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon sesame seeds
- Green onions, sliced, for garnish
Instructions
- Prepare the Chicken: Pat the chicken pieces dry with paper towels. In a large bowl, combine the flour and cornstarch. Coat each chicken piece in the flour mixture, ensuring an even coating. Shake off excess.
- Make the Sauce: In a saucepan, combine gochujang, soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger. Place over medium heat and cook until the sauce thickens slightly, about 5-7 minutes. Remove from heat and set aside.
- Fry the Chicken: In a deep frying pan or pot, heat oil over medium-high heat until it reaches 350°F (175°C). Carefully add chicken pieces in batches, frying until golden and crispy, about 5-6 minutes per batch. Remove chicken and drain on paper towels.
- Coat the Chicken: Place the fried chicken in a large bowl. Pour the spicy Korean sauce over the chicken and toss to coat evenly.
- Garnish and Serve: Sprinkle with sesame seeds and sliced green onions. Serve hot.
Notes
- For extra crispiness, double fry the chicken. After the first frying, let the chicken rest for a few minutes and fry again until even crisper.
- Adjust the level of spiciness by increasing or decreasing the amount of gochujang.
- Add a splash of water to the sauce if it becomes too thick.
