- 200g (7 oz) chicken breast, thinly sliced
- 200g (7 oz) egg noodles
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon vegetable oil
- 1 cup cabbage, sliced
- 1/2 cup carrots, julienned
- 1/2 cup green beans, sliced
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- Salt and pepper to taste
Instructions
- Prepare the Noodles: Cook the egg noodles according to package instructions. Drain and set aside.
- Marinate the Chicken: In a bowl, mix the sliced chicken with 1 tablespoon of soy sauce and a pinch of salt and pepper. Let it marinate for about 10 minutes.
- Stir-Fry the Chicken: Heat half of the vegetable oil in a large wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through. Remove the chicken and set aside.
- Stir-Fry the Vegetables: In the same wok, add the rest of the oil. Add the garlic and ginger, stirring for about 30 seconds until fragrant. Then, add the carrots, cabbage, and green beans. Stir-fry for 3-4 minutes until the vegetables are just tender.
- Combine Everything: Add the cooked noodles and chicken back into the wok with the vegetables. Pour in the oyster sauce and remaining soy sauce. Toss everything together, ensuring the sauce coats all ingredients evenly.
- Final Touches: Add the chopped green onions and stir for another minute. Adjust seasoning with salt and pepper as desired.
- Serve: Transfer to a serving dish and enjoy hot!

- For extra flavor, add a dash of sesame oil just before serving.
- Feel free to add other vegetables such as bell peppers or mushrooms for variety.
- If you prefer spiciness, add a teaspoon of chili sauce or flakes during the stir-frying process.
