Description

Delicious and fruity jelly cubes made with mixed berries and a hint of lemon, perfect for a sweet treat!


Ingredients

  • 2 cups mixed berries (fresh or frozen)
  • 2 cups granulated sugar
  • 4 tablespoons unflavored gelatin
  • 1 cup water
  • 2 tablespoons lemon juice
  • powdered sugar – for dusting

Instructions

  1. Prepare the Berries: If using fresh berries, wash them thoroughly. Combine the berries with 1 cup of sugar in a saucepan.
  2. Cook the Berries: Simmer the berries and sugar over medium heat until the mixture becomes syrupy and the berries are soft (about 10 minutes). Stir in the lemon juice.
  3. Blend the Mixture: Remove from heat and carefully blend the mixture until smooth.
  4. Strain: Strain the berry puree through a fine-mesh sieve to remove seeds and pulp. Collect the juice in a bowl.
  5. Gelatin Activation: In a separate bowl, sprinkle the gelatin over 1 cup of cold water. Let it sit for about 5 minutes to bloom.
  6. Combine: Mix the gelatin with the hot berry juice, stirring until completely dissolved and smooth.
  7. Pour and Set: Pour the gelatin mixture into a square or rectangular dish lined with plastic wrap for easy removal. Refrigerate for at least 4 hours, or until set.
  8. Cut and Coat: Once set, cut the jelly into cubes and roll them in powdered sugar to coat evenly.

Notes

  • Use a silicone mold for easier removal and consistent shape.
  • To prevent sticking, dust the cubes with additional powdered sugar right before serving.
  • You can experiment with different berry combinations to suit your taste.
  • For a citrus twist, add some orange zest to the berry mixture.
