- 2 cups vegetable broth or chicken broth
- 2 tablespoons extra virgin olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 large lemon (juice and zest)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large saucepan over medium heat. Sauté chopped onions until translucent, then add minced garlic for about a minute.
- Stir in the rice and toast for 2–3 minutes until slightly golden.
- Add the broth, lemon juice, and zest; bring to a gentle boil while stirring occasionally.
- Reduce heat to low, cover tightly, and simmer for 15–20 minutes until liquid is absorbed.
- Fluff the rice with a fork, then mix in parsley, salt, and pepper before serving.
