A refreshing and delightful tropical dessert featuring layers of mango, passionfruit, and cream.

- 3 large ripe mangoes
- 4 whole passionfruit
- 200g ladyfingers or sponge cake
- 500ml whipping cream
- 200g cream cheese
- 100g sugar
- 1 tsp vanilla extract
- 2 tbsp lime juice
- Fresh mint leaves – for garnish
- Edible flowers – for garnish
Instructions
- Prepare the Mango Layer:
- Peel and dice the mangoes into small cubes.
- Set aside a few cubes for garnish.
- Mix the remaining cubes with the lime juice in a bowl.
- Prepare the Passionfruit Layer:
- Cut the passionfruit in half and scoop out the pulp.
- Mix the pulp gently with the diced mangoes.
- Prepare the Cream Layer:
- In a large mixing bowl, combine cream cheese, whipping cream, and sugar.
- Beat the mixture with an electric mixer until soft peaks form.
- Add vanilla extract and mix until combined.
- Assemble the Trifle:
- In a trifle dish, place a layer of ladyfingers or sponge cake at the bottom.
- Gently spoon a layer of the cream mixture over the cake.
- Add a layer of the mango and passionfruit mixture.
- Repeat the layers until all ingredients are used, ending with the cream layer.
- Top with reserved mango cubes, fresh mint leaves, and edible flowers for garnish.
- Chill:
- Cover the trifle with plastic wrap and chill in the refrigerator for at least 2 hours to allow the flavors to meld.
Notes
- Ensure all ingredients are chilled for a fresher taste.
- For a more intense flavor, add some grated lime zest to the cream layer.
- Use ripe fruits for the best flavor and texture.
- Substitute ladyfingers with gluten-free sponge cake if needed.
- Make sure the trifle dish is completely dry before assembling to prevent sogginess.
