Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate your zucchini and squeeze out the excess moisture using a clean kitchen towel.
  3. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  4. In a large bowl, beat the eggs, then stir in the oil, sugar, and vanilla extract until well blended.
  5. Add the grated zucchini and shredded cheese into the wet ingredients; stir until fully combined.
  6. Gradually fold the dry ingredients into the wet mixture, taking care not to overmix.
