Delicious Chicken Caesar Rice Bowl with fresh ingredients, perfect for a quick meal.
Ingredients

- 2 cups cooked rice (white, brown, or whatever’s knocking about)
- 2 cooked chicken breasts, sliced or shredded
- 2 cups romaine lettuce, chopped
- ½ cup cherry tomatoes, halved (optional)
- ½ cup croutons
- ¼ cup shaved or grated parmesan cheese
- 1/3 cup Caesar dressing
- Fresh cracked black pepper, to taste
- Lemon wedges, for serving
Instructions
- If your rice is cold, give it a zap in the microwave for a minute or two until it’s warm-ish but not scalding.
- Add your cooked, sliced chicken on top of the rice. Or, honestly, just mix it all in if you can’t be bothered to keep things pretty.
- Scatter that chopped romaine over next, then the cherry tomatoes if you’re using them.
- Drizzle the Caesar dressing all over and toss gently to coat.
- Sprinkle over the parmesan and croutons. Give it a few cracks of black pepper.
- Stand back and admire before demolishing. Add lemon wedges on the side for squeezing.
Notes
- Sometimes I use that microwaveable rice in a pinch.
- Rotisserie chicken or leftover grilled thighs work great.
- Pre-shredded parmesan cheese is totally fine.
- If I’m feeling lazy, I’ll just toast torn sourdough in the pan with a bit of olive oil and garlic powder for croutons.
- This bowl looks a bit like a garden exploded, but that’s the vibe!
