Description

A delicious cheese log made with cream cheese, goat cheese, dried cranberries, and pecans.


Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 4 ounces goat cheese, softened
  • 1 cup dried cranberries, chopped
  • 1 cup pecans, finely chopped
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. In a mixing bowl, combine softened cream cheese and goat cheese until smooth.
  2. Mix in honey, vanilla extract, salt, and pepper.
  3. Fold in chopped cranberries and half of the pecans until evenly distributed.
  4. Shape the mixture into a log using plastic wrap; refrigerate for at least 2 hours until firm.
  5. Roll the chilled log in remaining pecans to coat thoroughly before serving.
