Description
A delicious cheese log made with cream cheese, goat cheese, dried cranberries, and pecans.

- 8 ounces cream cheese, softened
- 4 ounces goat cheese, softened
- 1 cup dried cranberries, chopped
- 1 cup pecans, finely chopped
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- In a mixing bowl, combine softened cream cheese and goat cheese until smooth.
- Mix in honey, vanilla extract, salt, and pepper.
- Fold in chopped cranberries and half of the pecans until evenly distributed.
- Shape the mixture into a log using plastic wrap; refrigerate for at least 2 hours until firm.
- Roll the chilled log in remaining pecans to coat thoroughly before serving.
Notes
- This cheese log can be made a day in advance and stored in the refrigerator.
