Description

This isn’t your average avo toast. A lacy, golden parmesan crust turns a simple fried egg into a salty, crispy masterpiece—laid perfectly over creamy avocado and finished with a hit of chili flakes. Crunchy, creamy, and just spicy enough, it’s the kind of breakfast that feels like a treat but takes just minutes to make.


Ingredients

  • 1 slice sourdough or multigrain bread, toasted
  • 1/2 ripe avocado
  • Salt & pepper to taste
  • 23 tbsp grated Parmesan cheese
  • 1 egg
  • Pinch of red chili flakes
  • Optional: lemon zest or hot sauce

Instructions

  1. Toast the slice of bread until golden brown.
  2. In a skillet, cook the egg to your liking.
  3. While the egg is cooking, mash the avocado in a bowl and season with salt and pepper.
  4. Sprinkle the grated Parmesan cheese on a non-stick skillet and let it melt and crisp up to form a crust.
  5. Once the cheese is crispy, place the fried egg on top.
  6. Assemble the toast by spreading the avocado on the toasted bread and topping it with the crispy egg.
  7. Finish with red chili flakes and optional lemon zest or hot sauce.
