- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced

- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup green olives, sliced
- 2 hard-boiled eggs, chopped (optional)
- 1/4 cup raisins (optional)
- 1 beaten egg (for egg wash)
Instructions
- Prepare the Dough: In a large bowl, mix the flour and salt. Add butter and mix until the mixture resembles coarse crumbs. In a separate bowl, whisk together the egg, water, and vinegar. Gradually add to the flour mixture until the dough forms. Knead the dough on a floured surface until smooth. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Make the Filling: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the onions, garlic, and red bell pepper. Cook until the vegetables are softened. Stir in cumin, smoked paprika, salt, and pepper. Add olives, eggs, and raisins if using. Mix well. Let the filling cool to room temperature.
- Assemble the Empanadas: Preheat the oven to 400°F (200°C). On a floured surface, roll out the dough to 1/8-inch thickness. Cut into circles using a round cutter. Place a spoonful of filling in the center of each circle. Fold the dough over the filling to form a semi-circle and pinch the edges to seal. Use a fork to crimp the edges.
- Bake: Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish. Bake for 20-25 minutes or until golden brown.
