Description

These delightful red velvet cookies are soft, chewy, and topped with a creamy frosting!


Ingredients

  • 1/2 cup brown sugar, packed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and red food coloring.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Scoop tablespoon-sized portions onto prepared baking sheets and bake for about 10-12 minutes until set. Allow cooling on wire racks.
  7. For frosting, beat together cream cheese, powdered sugar, softened butter, and vanilla extract until smooth.
  8. Once cookies are completely cool, frost generously with cream cheese frosting.
