- 3 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 2 tsp ground cumin
- Juice of 2 limes
- 8 corn tortillas
- 1/2 cup chopped fresh cilantro
- 1/2 cup diced red onion
Instructions
- Marinate the beef: In a bowl, whisk together olive oil, garlic, cumin, lime juice, salt, and pepper. Add flank steak to the marinade and refrigerate for at least one hour or overnight for best flavor.
- Preheat your grill: Heat to high (450°F/232°C).
- Grill the steak: Remove steak from marinade, discard marinade, and grill for 5-7 minutes per side until it reaches desired doneness.
- Rest and slice: Let the steak rest for five minutes before slicing against the grain into thin strips.
- Assemble tacos: Warm tortillas over medium heat. Layer each tortilla with sliced meat and top with cilantro and red onion.
- Serve: Enjoy immediately with lime wedges on the side.
